Rum Balls 60 NILLA Wafers, finely crushed (about 2-1/2 cups crumbs) 1 cup powdered sugar 1 cup finely chopped Pecans 1/2 cup (1 stick) butter or margarine, melted 2 Tbsp. light corn syrup 2 Tbsp. unsweetened cocoa powder 1 tsp. Instant Coffee 1/4 cup rum 1 cup flaked Coconut, toasted MIX wafer crumbs, sugar, pecans, butter, corn syrup and cocoa. DISSOLVE instant coffee granules in rum. Add to crumb mixture; mix well. Let stand 15 min. SHAPE mixture into 1-inch balls; roll in coconut. Place in airtight container with sheet of wax paper between each layer of balls. Store at room temperature. You can substitute toasted Sliced Almonds or chocolate sprinkles for the coconut. These rum balls can be rolled in a variety of coatings for a sweet treat. The flavor of these rum balls improves upon standing.

These were my mother's favorite holiday treat. Every year, my sister would make a big batch of them and send them to her.

My aunt said her mom used to do the same thing. One year my aunt and her brother found the stash and hid under the dining room table and ate them all. She said they got pretty loopy, but they were so good! We just thought it was funny hearing her say rum balls in her Long Island NY accent.
