I made some of this today, but sure didn't follow the recipe. I'm posting the original recipe first, followed by what I did.
Pimento Cheese with a Kick
1 pound grated Cheddar 1/2 pound grated Pepper Jack 1 (4-ounce) can diced pimentos 1/3 teaspoon granulated garlic 1/3 teaspoons granulated onion About 1/2 teaspoon freshly ground black pepper Pinch cayenne About 1/2 tablespoon green pepper sauce 2/3 cup mayonnaise
In a medium bowl, mix all ingredients well and refrigerate for 30 minutes.
My Pimento Cheese with a Kick
1 lb. mixed shredded cheese (mine was cheddar, monterey jack, and Queso Blanco) 1 small jar pimentos, undrained 1 T. minced jalapenos and about an equal amount of the juice 1/2 small can minced green chiles\ 1/2 t. garlic powder 1/2 t. onion powder Black pepper to taste Salt to taste, if needed Mayonnaise to moisten (about a cup or maybe a little less)
Put cheese, pimentos, peppers, chiles, garlic powder, onion powder in a medium bowl. Add mayo and stir. Add more if you need to. Season with pepper and salt, if it needs it (mine needed a tiny bit, about 1/4 t.)
You could also add some hot sauce (red or green) or cayenne if you like it spicier. Minced dehydrated tomatoes would also be good in this.
Refrigerate for at least 30 minutes before eating, although it was pretty danged good when it was first made.

Sounds like Pimento cheese with attitude. I'll be tryin this. I like the texture when you put a little cream cheese in it. Maybe I'll add some to see how it is.

wonder if i could substitute green or red be peppers for the pimentos we don't like them really don't know why never have.

Her's another one you might enjoy we did.
Cheese Spread
2 cups shredded Mexican-style processed cheese food 1 (8 ounce) package cream cheese, softened 1 (4 ounce) can deviled ham meat spread 2 tablespoons chopped green onion 2 tablespoons milk 1/2 teaspoon Worcestershire sauce In a medium bowl, mix the Mexican-style processed cheese food, cream cheese, deviled ham meat spread, green onion, milk and Worcestershire sauce. Chill at least 3 hours before serving.
I liked it better with grated pepper jack or habanero/pepper jack cheddar cheese

I dont know about fresh bell peppers but I've used roasted bell peppers from a jar when I didnt have pimento and it was very good. I got a bunch of them somewhere really cheap. We like pimento but I dont always have it.

Oh, Sheila, that DOES sound good! I never thought about adding deviled ham to it. I think I'm going to take part of the batch I made yesterday and stir in some of Peggy's deviled ham. I already have part of a batch of that in the refrigerator.
Peggy, I've been stocking up on pimentos. Dollar General has them for $1 a jar, so I try to buy a few jars everytime I go there (which is every week) If you DO stock up on them, you might want to store the jars in a shoebox or something similar. The jars, being rounded, are very slippery and have a tendency to jump off the shelf and break.
I like those little jars. They're good for storing dried herbs.
