I dry our excess eggs. I scramble them into a stainless skillet and use a stainless spatula to keep scraping the pan so they don't burn. I cook them as dry as possible and break all the pieces as small as I can. Then I spread the eggs onto cookie sheets and put in the oven on 150 until dry. I go and stir them occasionally. When good and dry, I put them into canning jars and freeze.
Best used in another dish rather than just as eggs. Texture is a little off putting to me. Good mixed with potatoes and onions and served in a tortilla. Can be added to bread dough after running thru a food processor to powder them.

Thank you never thought of drying eggs gonna try them,can they be rehyderated ?

Yes, you need to soak them a while to use them in most recipes.
