Creamy Cream Cheese Chicken and Noodles2 boneless, skinless chicken breasts, cut into bite-size pieces 1 carrot, diced small 1 small onion, diced small 1/4 c. bell pepper, diced small 1 clove (or 1/2 t.) finely minced garlic 2 cups cooked broccoli florets (I used frozen. You could also use leftover) 1 recipe Cream Cheese Cooking Creme, Ranch flavorsalt and pepper to taste 1 pkg. egg noodles, cooked and hot Cook onion, carrot, and bell pepper until tender. Stir in chicken and garlic and cook until chicken is tender. Stir in broccoli. Stir in Cooking Creme and heat through. Season with salt and pepper, if needed. Serve over noodles. Note: Although I didn't add them, celery and/or mushrooms would be good in this, too. Serves 4-6.
