Wanted to experiment with a new Carolina BBQ sauce. As usual I cannibalized a few recipes & added one ingredient of my own.
1 cup catsup 1 cup cider or any fruit based vinegar 1 cup balsamic vinegar 1 cup brown sugar 2/3 cup water 1/2 tsp salt. 1/2 to full teaspoon cayenne pepper or red pepper flakes. (Anything you like to add a kick is fine like chipotle or habanero)
Bring to a boil & reduce to the consistency you like. Great for pulled pork!

As usual I cannibalized a few recipes & added one ingredient of my own. That's pretty much my method for creating new recipes, too, but I never heard it put quite that way. I'll have to get some balsamic vinegar and try it.

Thanks, Steve! Carolina is my favorite kind of sauce. It's yummy on chicken, too.

I really liked the twist the balsamic gave the sauce which was my lil personal addition An elderly fella I was talking to told me that he keeps his very simple. 1 cup catsup, water, brown sugar & cider vinegar. He said take that & run with where ya wanna go so thats how I came up with that. I wanted to do something different than my chipotle heat which I have used in the past 3 sauces so I did this with cayenne.

Steve, have you ever tried adding smoked paprika to it? I like that if I'm cooking indoors. On the grill or smoker it isn't necessary.

Gayle you just made me scratch my head a bit cause I have never seen that. 1/3 off my bbq rub is probably paprika so that makes total sense. I wonder if I could make my own when I smoke jalapenos then dry it down. I will have to keep a lookout for some. I am gonna be making different sauces till November so I need all the ideas I can get! Thanks!

I'd heard of it on cooking shows, but never saw it in stores, so I ordered some. I'm glad I got a pound of it, I've been using it a lot! OMG! Its been driving me crazy how much I spend for spices for bbq & everything else. There is no way I could ever beat these prices cause even when I buy them at the restaurant outlet they are 5 times these prices. This is the best forum in the whole wide world.....for cooks
