Buttermilk Candy
1 cup buttermilk 1 t. baking soda 2 cups sugar 2 T. light corn syrup 1/4 cup (1/2 stick) butter or margarine 1 cup chopped pecans, optional
Combine buttermilk and baking soda in 3 quart heavy saucepan. Be certain you use a big enough pan, since this will boil up. Let stand 20 minutes.
Add sugar and corn syrup to buttermilk. Bring to a boil, stirring until sugar is dissolved. When mixture boils, add butter and cook, stirring as needed, to soft ball stage (236 degrees). It will turn a medium brown.
Remove from heat and cool to lukewarm. Beat until mixture loses its gloss and thickens. Stir in nuts, if desired.
Pour into buttered 8" or 9" square pan. Cool and cut into squares.
Makes about 1 1/2 lbs.
