Potato Candy
*1 small potato *powdered sugar (amount depends on how big your potato is, so be sure you have enough. For a potato the size of a large egg, I like to have at least a pound) *peanut butter
Peel and dice potato. Put it in a medium saucepan, barely cover with water, bring to a boil, and cook until very tender. Drain off water and mash.
While potato is hot, start adding powered sugar. At first it will melt and get runny. Keep adding it until it forms a dough that isn't sticky.
Put additional powdered sugar on table and knead the potato mixture until it's smooth, adding more sugar, if needed. When it's smooth, roll it out into a rectangle and spread with peanut butter.
Beginning with long edge, roll as you would a jelly roll, loosening it from the table with a plastic spatula, if necessary. Once it's rolled up. slice and set on waxed paper to dry out for a little while. Store in air-tight container, with waxed paper between layers.
