This tastes just like the Hamburger Helper Quesadilla Rice.
Quesadilla Rice 1 c rice 1 c chopped leftover brisket (or whatever you've got on hand) 1 can Rotel Mexican diced tomatoes with lime and cilantro 1 and 2/3 c water cooking oil 1 tsp cumin 1 tbsp onion powder 1 tsp beef boullion granules 1 c grated sharp cheddar 1/2 tsp pepper
Saute rice in about a tablespoon of oil until just starting to brown. Add leftover meat and continue to saute, stirring occasionally, until meat has a nice sear and rice is browned. Puree canned tomatoes in a blender. Add water and pureed tomatoes to rice, along with seasonings, cover and simmer until water is nearly absorbed. Add cheddar, stir until melted.
I plan to experiment by adding half a cup of cream to make this both saucier and milder to young palates.
