Here is a recipe for an egg dish that I have been making since the 70's and it never fails to please family and guests. I have had many requests for this, too. A frittatta is basically an Italian omelet, but baked. I got this recipe from a Family Circle magazine in the early 70's. You can put pretty much anything in it, and use up bits and pieces of meats, leftovers, cheeses, etc. I use a 10 1/2 in quiche pan (glass) to bake this in.
To serve 4 as a main dish, or 6 as part of a brunch:
6 eggs
3/4 c. milk
2 T. melted butter (I save a little out to grease the pan with)
1 heaping cup of shredded cheese (anything works, just not mozzarella)
1 c. or so of "add-ins" (diced ham, cooked sausage meat, mushrooms, broccoli, chopped asparagus, diced tomatoes, zucchini, chopped cooked potatoes, onions, green pepper, etc. Choose and use what you have on hand.)
salt and pepper, to taste, and a little paprika to sprinkle on top

Mix the eggs and milk and seasonings and melted butter together. Pour into the greased quiche pan. Put the cheese in first, then lay over that whatever meat and veggies you are using. You don't really have to cook the broccoli or mushrooms first, they cook up with the eggs. Then I usually sprinkle a little more cheese on top of everything, or sprinkle a little Parmesan over that. Then dust a little paprika over. Bake for 30 min in a 400 degree oven. It will puff up a little and get slightly golden. Cut into pie shaped pieces. I usually serve this with hash browns, and salad for supper. For breakfast or brunch I serve it with a fruit salad, toast, and maybe some hash browns, and some kind of coffeecake. This is such an easy egg dish, no crust to make, no casseroles to store overnight in the 'fridge, and if you have more people to feed, you can just use more eggs and more milk and put in a larger pan. Note: the reason for putting the cheese down first is that the cheese doesn't brown so much that way.
