What would you suggest for a "never fail" first time sun oven recipe?

Ooo - curious BigM. What/where did you get your pans? I simply could not find anything the right color & size in the store, and order two round enamel pans (like that - whatdoyoucallit - fleckware?) with lids. I use them all the time (great pans, and inexpensive). Nothing else I had fit or could I contrive a lid for.
I have heard that people will sort of balance a 13x9 pan in there and bake brownies with no lid (I guess they work because they're dark?) but I haven't tried that.
Mine is out there right now with veggies roasting.

Eye~ I had heard that pans could be an issue so I looked and looked until I found a deal on e-bay. For $280 I got the oven, 2 pans with lids, two loaf pans, two brownie pans, water purification things and shipping. If you look at the ovens there a lot of them have a link for the pans and such at the bottom.
Sheila~ Any TnT ones? I would like this to go off well because DH is skeptical.

I was going to say brownies, but Kim beat me to it. That was the first thing I cooked in the one I made. Seriously, how can you go wrong with brownies? Even if they don't get quite done in the middle, that just makes them better.

lol, I guess that's true Granny!
I want to try this I think...
MEAT LOAF 1½ pounds ground beef 1 cup tomato juice 1 egg ¼ cup chopped onion ½ teaspoon salt ¼ teaspoon pepper ¾ cup rolled oats or breadcrumbs Preheat SUN OVEN®. Combine ingredients. Bake in loaf pan at 325º F for 1½ hours.
Any suggestions for cooking times if I double it?

I'd be real leery of doubling meat unless you cooked it in two pans. You want to make sure it gets done in the middle (especially hamburger) and if it's too dense, it might not get hot enough.

Can you stick a meat thermometer in it? 165-175 degrees should work out fine.

I was going to use two pans for it. I used to have a thermometer with a prob that was on a wire so you could set the gauge outside. I'll have to find that. I ended up not cooking the loaf in there this time. I made bread which turned out great and brownies that were ok. They were a bit undercooked on the bottom and since they got left in the pan, and then put in the fridge, they were doughy the next day. I think there is something wrong with the hinges for the glass. I have to fight the thing to open or close it because the hinges don't have a hold of the glass. Is that right? BigM

If you split the meatloaf into two pans, I'm pretty sure the cooking time wouldn't change. It only changes if you double up in one pan, because it takes a lot longer for the heat to get to the center. I didn't say it very well earlier, but what I meant was, if it takes too long for the center of the meat to get hot enough to kill bacteria, you can wind up with a nest of something in the middle that can make you sick. It can be hot enough for them to grow like mad without being hot enough to kill them. But in two pans, no problem. I'm so glad you're able to use this! Lord knows you have enough sun!
