I serve these as a side dish, but also use them in place of bread to make sandwiches. We especially like them for fried egg or tuna salad sandwiches.
Easy Cheesy Potato Pancakes
1 egg 1/2 c. shredded cheese 1 medium potato, grated (about a cup) 1 T. flour salt and pepper to taste pinch of onion powder, optional
Break egg into medium bowl and beat. Stir in remaining ingredients.
Heat skillet over medium heat; add butter and an equal amount of oil (so the butter doesn't burn). Drop potato mixture into pan by heaping tablespoons and flatten to about 4" in diameter. Fry until edges begin to brown, turn and fry until browned. Serve hot as a side dish (or at room temperature, if you're using these to make sandwiches)
Makes about 4 potato pancakes. Recipe can be doubled, tripled, or whatever you need to serve your family.
