Broccoli Casserole contributed by gayla
2 packages frozen chopped broccoli 1 can cream of mushroom soup 2 cups grated sharp cheddar 2 eggs, beaten 1 cup mayonnaise 1 cup French fried onions, chopped 1/4 cup sour cream 1 1/2 cup cheese cracker crumbs Salt and pepper to taste
Cook broccoli until just tender. Drain/press to remove all excess water. Combine remaining ingredients, except 1/2 cup cracker crumbs, with broccoli. Stir well. Pour into buttered casserole dish. Top with remaining crumbs. Bake uncovered in 350° F oven for 30-45 minutes.
