Creamy Baked Corn contributed by gayla
2-4 bacon slices 1 Tbsp butter 2 Tbsp chopped onion 2 Tbsp flour 1 tsp salt 1 cup sour cream 1 (16 oz) pkg frozen corn, thawed
Cook bacon in large skillet until crisp; remove bacon and reserve drippings in skillet. Crumble bacon and set aside.
Melt butter in hot drippings over med heat; add onion and saute until tender.
Whisk in flour and salt until smooth and bubbly. Whisk in sour cream until smooth; cook, whisking often for 3 min or so. Stir in corn and cook until heated through. Spoon into a lightly greased 8" baking dish. Top with bacon.
Bake at 350 for 15-20 min or until bubbly.
