Cauliflower "Mac & Cheese" contributed by gayla

I got this from a lady at church it is great and so good .
2 bags chopped cauliflower 2 cups heavy whipping cream 4 ounces cream cheese 1 T. Dijon mustard 2 cups shredded cheddar cheese 1 cup shredded cheddar cheese for topping 1/2 tsp black pepper 1/2 tsp garlic powder salt to taste
Preheat oven to 375 F. Bring large pot of water to boil. Season water with salt. Cook cauliflower in the boiling water until tender, about 5-7 minutes. Drain and pat well with paper towels.
Transfer cauliflower to 9 x 13 baking dish. Pour heavy whipping cream in large saucepan and bring to a simmer. Whisk in cream cheese and mustard until mustard until smooth. Stir in 2 cups of cheddar cheese, salt, pepper, and garlic and whisk until cheese melts. Remove from heat and pour over the top of the cauliflower. Stir to combine. Top with 1 cup of cheddar cheese. Bake until cheese is browned and bubbly hot, about 15 minutes
