2 eggs 3/4 cup oil 2 tsp vanilla 2 cups flour 1 cup brown sugar 2 tsp baking soda 2 tsp cinnamon 1.2 tsp salt 1 cup shredded apples 1 cup shredded carrots 1/2 cup coconut (opt) 3/4 cup chopped nuts beat eggs,oil,vanilla,brown sugar,carrots and apples in separate bowl mix dry ingredients.Add nut mix into wet ingredients. makes 18 muffins bake at 350.
you can replace the carrots with zuchinni if you wish,if using zuchinni make sure it is drained of most of it's moisture.
