Pineapple-Saki Marinade contributed by carla
I marinate chicken in this before grilling or thin it a little more with pineapple juice and use it as a stir-fry sauce.
2 c. pineapple juice 1-1/2 c. sake 1/2 c. light soy sauce 6 T. sugar (I use 4 T. sugar and 2 T. brown sugar) 6 T. sesame oil 1/2 t. crushed red pepper flakes
Combine all the ingredients in a small saucepan and cook over medium heat, stirring constantly, until the sugar is dissolved, 2-3 minutes. Reduce the heat to low and simmer, uncovered, for 45 minutes.
Remove from the heat and cool. Use immediately, or transfer to an airtight container and refrigerate for up to 1 month.
