Pickled Beets
Beets - washed, cooked till tender, peeled and sliced or cut into bite-size chunks 1 c. sugar 1 c. vinegar 1 c. water 1/2 t. salt (non-iodized)
Make as many batches of brine as you need to cover beets. Heat brine to boiling. Add beets and heat to a simmer. Pack into scalded jars, adjust hot lids and HWB 10 minutes (I skip the HWB part)
