What's the best way to dehydrate cabbage?

I don't know the best way, but when I did it, I cut it sort of in shreds like I would if I was frying it. Then I steam blanched it in the microwave for a couple minutes (used the directions for broccoli) then dumped it on the trays and dried it until it was crunchy. It kept it's color real nice, being blanched.

I've never had dried cabbage. Do you like this product? How do you use it?

I do it like Valerie does, only blanching on the stove top. I like it a lot tricia - we love cabbage soup, and it's a no brainer dropping it in. I don't even bother rehydrating.

I've rehydrated it before, drained off the extra water, and fried it in bacon grease just like fresh. It was good.

I blanched mine on the stovetop, too. (had too much to do in the microwave) So far I've only used it in soup and we couldn't tell it from fresh. It took about as long to soften as fresh does to cook.
It's good plain, too - straight out of the jar - crunchy and a little spicy.

I think I have to try this the next time there is a sale, or if I can get some planted and grown here. It tends to get pretty buggy here, so I've avoided planting it the past few years, but I really do like cabbage.

I just may try this. i don't eat much cabbage because there is something about preparing it and cooking it that I don't like. Just some weird tick that developed.
Having it dried and ready to use would really eliminate a problem for me.
