Homemade Baking Powder
2 tbsp cream of tartar 1 tbsp cornstarch 1 tbsp baking soda
The benefits of this recipe is that the individual ingredients have an almost indefinite shelf life; baking powder loses efficacy only after mixing the three. The down side is that it's a single-action baking powder, and not very forgiving. Get your goods into the oven quickly and don't expect them to rise again in the oven (that's double-action BP).
