Potato Flake Chicken 1 cup mashed potato flakes 1/3 cup grated Parmesan cheese 1 teaspoon garlic salt 1/2 tsp. italian seasoning 1 1/2 lbs. chicken breasts (sliced into 1" strips) or chicken tenders. 1/3 cup butter or margerine, melted
In a shallow bowl, combine the potato flakes, Parmesan cheese, italian seasoning, and garlic salt. Dip chicken in butter, then coat with potato flake mixture. Place in a greased (cooking spray) baking pan. Bake, uncovered, at 375° for 15 minutes or until juices run clear. Broil on top rack for 3-5 minutes or until lightly browned. Serves 6

Thanks for posting. I have a bunch of dehydrated mashed potatoes I don't know what to do with. This will be a good use for them.
