2 -3 large potatoes 4 T butter, melted 4 -5 eggs 3/4 C milk salt & pepper Add-ins: grated cheese, cooked diced ham, cooked crumbled bacon, or chopped fresh spinach, whatever you want, about a cup of each.
Preheat oven to 450° . Dice potatoes very small (I used a french fry cutter then cut them in cubes.) Steam in microwave with a couple teaspoons of water in a covered bowl, 3-4 minutes. Toss with butter, then press into bottom and up sides of pie plate. Bake for 25 minutes. While crust is baking, beat eggs and mix in other ingredients. When crust is done, reduce oven heat to 350° and pour egg mixture into crust. Bake about 20 minutes, or until set in the center.
Good served with salad. This also freezes well. If you make one and freeze it, do not thaw. Put in oven frozen (foil pans work well for this) and bake about an hour at 350°.

Oh this sounds good just made a batch of my turkey sausage,it will go good with this.
