I was looking for a recipe involving peaches and honey, but not too much honey. Found this one. It's quite tasty!
PEACH JAM Printed from COOKS.COM 6 c. peaches, quartered & peeled 2 c. honey 1 tsp. nutmeg 1 tsp. cinnamon 1 box powdered pectin Juice of 1 lemon
To peel the peaches, dunk them into hot water for 1 minute, then into cold water. Skins slip right off. Pit and quarter them. Mash and add pectin. Bring to a boil. Add honey, lemon juice and spices. Bring to 9 degrees F above boiling, and cook at this temperature for 5 minutes. Spoon hot into hot sterilized jars to within 1/4 inch from top. Seal. Process 10 minutes in a boiling-water bath. Yield: 6 half-pints.

Thank you thank you just got a bucket of peaches and was thinking of an alternative to sugar,wonder if i can use this same recipe for my apricot pineapple jam?

Gayle, since you don't like nutmeg, you might leave it out or cut it back. It's pretty noticeable in the finished product.
Had some on a piece of toast this morning. Yummy! Didn't set up real stiff, kind of soft and gooey. But I like it that way. The honey I used is wildflower, kind of strong by itself. It would taste different, I'm sure, with more of a mild honey, like clover.

Valerie, I was thinking about using allspice instead of nutmeg. I love allspice and it makes a pretty good substitute for nutmeg in anything I've tried it in.
