2 c. dark beer 1 c. oatmeal 2 t. salt 1/3 c. molasses 1/4 c. unsalted butter, softened 1 (1/4 oz.) pkg. dry yeast 1/3 c. warm water 5-6 c. unbleached flour
In small saucepan, heat beer to boiling. In large bowl, combine oatmeal, salt, molasses, butter and hot beer. Set aside and cool to lukewarm. Dissolve yeast in water. Add to oatmeal mixture and stir to blend. Stir in flour, 2 cups at a time, stirring well after each addition. Turn dough out onto lightly floured surface and knead 8-10 minutes, or until smooth and elastic. Place in oiled bowl, turning to coat entire surface. Cover with plastic wrap and towel and let rise until doubled in bulk, about 1 hour. Punch dough down, and divide in half. Shape each piece into a loaf and place in ungreased 9x5" loaf pans. Cover as before and let rise until doubled in bulk, about 45 minutes.
Preheat oven to 375F. Bake 30-45 minutes, or until loaves sound hollow when tapped on top and sides pulled away from pans. Remove from oven and cool in pans 10 minutes. Remove from pans and cool on rack.
