Honestly, that is the name. This came from Tasty Kitchen. Becky made it for our get-together this past week and it was wonderful. I'm not a big fan of macaroni salad, but this is good.
4 Cups macaroni 3 whole roasted red peppers, chopped (she used a small jar of them) 1/2 cup black olive, chopped fine 6 whole sweet/spicy pickle slices, diced (about 1/2 cup, diced -- we don't know what these are, so we used gherkins) 3 whole green onions, sliced (we used a healthy handful of chives instead) 1/2 cup mayo 1 Tbsp red wine, or distilled, vinegar 3 teaspoons sugar 1/4 teaspoon salt black pepper to taste 1/4 cup milk (more if needed) splash of pickle juice Extra pickle juice to taste
Cook macaroni. Drain, rinse under cold water, set aside. Mix together mayo, vinegar, sugar, salt, and pepper. Splash in enough milk to make it pourable. Splash in pickle juice for extra flavor. Taste and adjust seasonings as needed.
Place cooled macaroni in a large bowl. Pour 3/4 of the dressing over it and toss. Pour the rest of the dressing on if you like - it will thicken as it chills. (We just poured it all on at once.) Stir in the rest of the stuff. Chill at least 2 hours.
We thought it needed a little something, so we also added 1/4 tsp of cayenne pepper (which helped a lot) and a good heaping tbsp of zucchini relish.
