2 medium red potatoes, diced 1/2 large onion, sliced 2 bay leaves 1/2 tsp whole pepper corns 1/2 tsp dry garlic 1/2 tsp rosemary 1 tsp parsley Water to cover simmer on low till potatoes are done (you can add other veg if you like)
1 1/2 cup diced, cooked duck (I use canned.) Make a nice thick roux with cornstarch, broth and milk. Pour into skillet with potatoes and onions and cook till thick.
Line an 8 inch cast iron skillet with thick pastry (make it nice and short with lard), pour in the filling and top with thick pastry crust.
Bake at 350 on lower rack until top crust is nicely browned.

OMG, Kim! That sounds like Christmas dinner! I think that would be right tasty with a jar of beef, too.

Yes, beef would work. I can't tell much difference between canned duck and canned beef.
