How long will flour keep if I put it in a Mylar bag, in a sealed bucket with an O2 absorber in there? Any idea?

Flour is usually only good for a yr or two before going stale. (Actually starts going stale as soon as it is milled). The O2 absorber and mylar will keep it from deteriorating any faster though and keep bugs out.)
Flour is for short to mid-term storage, not long term.

Can you get a grain mill and get wheat instead? You can also buy field corn and put that up to grind. It keeps a long time if it is whole corn.

M, if you guys are still going to auctions, you should be on the look out for a good deal on an older grain mill. The Bells are good grinders and sometimes turn up cheap. Probably DH would let you get it if you show him how much money you can save by getting it at the auction. It is pretty much going to be an essential prep item, especially if you are ever going to grow any of your own grains, even corn or millet.
