Welsh Rarebit
1/4 c. all-purose flour 1/4 cup butter or margarine 1/2 t. salt 1/4 t. pepper 1/4 t. dry mustard 1/4 t. Worcestershire sauce 1 cup milk 1/2 cup beer 2 cups shredded cheddar cheese
Melt butter in medium saucepan over low heat. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirrring constantly. Boil and stir one minute.
Gradually add beer to sauce mixture. Stir in cheese, heat over low heat, stirring constantly, until cheese is melted.
Serve over toast. Garnish with paprika, if desired.
4-6 servings (about 1/2 c. sauce per serving)
If desired, omit beer and stir 1 1/2 cups milk into flour mixture.
