Yoghurt Cheese
Pour 2 cups of plain yoghurt into a fine cloth and tie the top. Hang over the sink or a bowl overnight, to drain.
Empty cheese out of cloth, into a storage container. Stir in your favorite flavoring - salt, pepper, onion, garlic, or whatever you like.
Olive and Pimento Spread
To one batch of yoghurt cheese, add a dash of pepper, dash of onion powder, about a dozen chopped green olives (or more, if desired), a little of the juice from the olives, and salt, if needed.
Serve on crackers.
