Potted Salmon
Makes 1 1/4 cups of filliing, enough for 8-12 sandwiches.
1 (15 oz) can of salmon, drained 1 T. lemon juice Pinch of cayenne pepper 1/8 t. ground cloves 1/8 t. salt (to taste) 1/4 cup butter, softened
Pick over salmon, discarding any coarse bones and dark skin. Mash with fork. Add all remaining ingredients and mix well to form a paste.
The recipe says to serve the sandwiches with sliced cucumbers on them, but I haven't tried that.
