i just made this and it's SO creamy and luscious! I could eat the whole batch! Next time I am going to double it.
Coconut Sorbet
1 (15-ounce) can cream of coconut (such as Coco Lopez)* 1 cup ice-cold water 1/4 cup lime juice, optional
In medium bowl, whisk together cream of coconut and ice-cold water. Taste. If it tastes too sweet to you, add the lime juice. (I didn't add it)
Pour into a 11x7x2-inch baking dish. Freeze until frozen, stirring every 30 minutes, about 3 hours. Transfer to a plastic freezer container, cover, and store in freezer.
Makes about 2 1/2 cups.
*Available in the liquor/mixer department of most supermarkets.

The non-dairy thing is the reason I found this. I'm avoiding dairy for the time being and thought maybe I could substitute coconut cream for milk. I prefer the cream, so this was perfect.
I might increase the water to 2 cups next time. This made a soft-serve type of sorbet. It wouldn't hurt it to be a bit firmer. Hopefully, it won't affect the taste too much because this is delicious.

I tried making this with a can of water, instead of the cup the recipe calls for. It came out firmer than the original recipe, but I think it's a little too icy to suit me. It's not crumbly, so you could still make scoops and the flavor was fine. I think 1 1/2 cups of water would be perfect. I'll have to get more cream of coconut before I can try it again.
I made another change, too. After I mixed it, I just poured it into a plastic container and froze it overnight. I didn't stir it at all. That worked out fine. No sense in making it harder than it has to be, right?

Amen to that, sister! When I do cantaloupe sorbet, I only stir it 2 or 3 times. I thought about putting it in my mixer bowl in the freezer, then just taking it out and beating it with the mixer a couple times, instead of doing the fork thing.

Hey, I couldn't get the Coco Lopez stuff, only coconut milk. Do you think that would work? If I added water it might be to icey, huh? Maybe I'll use it for something else and look at another store for the cream of coconut. I'd make my own, but I can't find unsweetened coconut, either!

Walmart has Coco Lopez. It's in the aisle with drink mixers (near the pop and beer)
I don't think the coconut milk would work. It's too thin and nowhere near sweet enough. Coco Lopez is thick, almost like coconut oil, and very sweet with a strong coconut flavor.

I used 1 1/2 c of water and added Meyer lemon juice to taste....tasted lovely before it was frozen.
