I am wanting to make taco salad so I searched for recipes. A lot of them had beans, corn, sour cream and a lot of other things in them. I don't remember all that stuff in taco salad, but it's been a long time since I had it. How do you make it?

I haven't made it but my mom made it a lot. She used lettuce, diced tomato, shredded cheddar, and seasoned hamburger meat. No beans. Daddy liked to put thousand island dressing on his. If I was making it, I'd probably add black beans and use a chipotle dressing just because I like it.

Sounds like your mom made it the way I remember it, except I remember it with Catalina dressing. It was the only thing I ever ate Catalina dressing on, which is probably why I remember it.

Gayla, that's just about the way I ended up making it, except without the onion and beans. It was a big hit. Some of the kids even ate the leftovers today. I have enough of everything to make it again and I probably will. I'll just need to cook more meat.

Now that you mention it, I have some hamburger and onion already cooked and frozen. All I'd need to do is heat it up and season it. Thanks for the idea!

I'm glad you posted this Gayle. I wonder if Dave would eat this on one of our hot days when it's too hot to eat much that's cooked. He likes salad OK, but not usually as dinner, although I have gotten him to eat salads with grilled chicken before, as long as he has bread to go with it.

Dan doesn't usually like just a salad for a meal, but he was fine with this, so maybe Dave would be, too. Just be sure to give him some bread so he doesn't notice.
