Amish Cinnamon Bread. No kneading, you just mix it up and bake it ♥
Batter:
1 cup butter, softened 2 cups sugar 2 eggs 2 cups buttermilk or 2 cups milk plus 2 tablespoons vinegar or lemon juice 4 cups flour 2 teaspoons baking soda
Cinnamon/sugar mixture:
2/3 cups sugar 2 teaspoons cinnamon
Cream together butter, 2 cups of sugar, and eggs. Add milk, flour, and baking soda. Put 1/2 of batter (or a little less) into greased loaf pans (1/4 in each pan). Mix in separate bowl the 2/3 c sugar and cinnamon. Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in each pan. Add remaining batter to pans; sprinkle with last of cinnamon topping. Swirl with a knife. Bake at 350 degrees for 45-50 min. or until toothpick tester come clean. Cool in pan for 20 minutes before removing from pan.

I'm making this tomorrow. I meant to make it today, but by time I got around to it, I had the kitchen clean and didn't want to mess up more dishes.

It's not bad. Dan, Tim, and Jake love it. I think it needs to be wrapped and 'cured' for a day or two, like you do pound cake. I'm going to try that with the second one (if they don't eat it before I have the chance)
It took a little longer to bake than the recipe said, about 10 minutes, but it's nice and moist.
Next time I think I'll cut back on the cinnamon. (Yes, there will be a next time. It was so easy to make and only used things I keep onhand)

I CUT BACK ON THE CINNAMON AS WELL ACTUALLY I PUT LESS ON TOP SURE IS GOOD WITH CREAM CHEESE

Thanks for the review! I didn't get mine made today. That stinkin' lesson plan took right up until an hour ago, plus we had to go to town and pick up the Jeep from getting painted.

Oh it looks great! Still has the old plastic trim, but the paint is good. The color is gorgeous (I got to pick ). It looked really bad before, with the clear coat stuff peeling off and all. Dave's using it for a work truck and we didn't want our customers to think we were too down and out. It looks downright respectable now. I'll try to post a pic tomorrow, since y'all have heard so much about it.

Sheila, you were right, cream cheese is fantastic on this! I was only going to eat one slice, but it was so good I ate two.
BTW, letting it cure for a day did make it easier to slice and let the flavors meld. The cinnamon doesn't even taste too strong today.

This is really tasty. I cut back the sugar to 1 1/2 Cups, though, and didn't use nearly as much cinnamon/sugar. I like it.
