Oven-Fried Beef and Bean Burritos
1 (12 oz) can of beef in liquid - I use Kirkland brand 2 c. cooked pinto beans 1 can Rotel diced tomatoes with chiles grated cheddar sliced black olives flour tortillas
In a skillet, place beef (with liquid), beans, a cup of water and two spoonfuls of the Rotel tomatoes. Yes, I know that's wasteful but they're too hot; use them to make a side dish of rice or something. Bring to a slow bubble; mash and cook until it's all been crushed into a thick, beefy glop.
Lay out your tortillas. Put a spoonful of the beef and bean mixture in a line down one side of the tortilla. Top generously with cheese and a few olives. Roll the tortilla tightly and place in a broiler pan, flap side down. Continue until you run out of ingredients.
Spray burritos well with cooking oil spray and bake in a 500 degree oven until golden-brown and crunchy.
