This is one of those recipes that sounds gross, but tastes good. I didn't think I'd like it, until I tried it. Then I couldn't stop eating it.
Sauerkraut Salad
-2 lbs. sauerkraut, rinsed, drained, and squeezed dry -1 small carrot, peeled and shredded -1/2 med. onion, finely chopped -1/4 med. bell pepper, finely chopped -3/4 c. vinegar (whatever kind you like) -3/4 c. oil -1 c. sugar -dash of salt, if needed
Place all vegetables in a mixing bowl. Mix together oil, vinegar, and sugar. Pour over vegetables and mix well. Add salt, if needed.
Refrigerate several hours, or overnight, to blend flavors. Serve cold. Keeps at least 2 weeks.
