I wasn't sure where to post this since it can be used as a main dish, side dish, or even a dessert.
I made half the recipe this morning using meatballs and parmesan in 4 of them and Million Meal Meat Sauce and cheddar cheese in 2. I liked them both. I want to make some with broccoli and cheese one day this week. I think that would be good as a side dish with chicken.
Quick Dinner Create Your Own Signature Mini Pie (and an easy way to get rid of leftovers!)
1/2 cup of Bisquick 1/2 Cup of Milk 2 eggs
Mix together for a base. (put about 1 tablespoon in each well-greased muffin cup)
Top with about 1/4 cup of any "fillings" you want. - cheeseburger, pizza, BLT, chicken and veggies, etc.... You can mix it up in the pan (any meat should already be cooked)
Top with one more tablespoon of the "Bisquick Mixture" - and bake at 375 for 25-30 (mine were done in less than 20, so keep an eye on them). It's a great way to get rid of your leftovers! These can also be frozen! Just pop them into the microwave for a quick meal on the go.

I made these again for supper. I put diced ham and diced cheddar in them and served spiced applesauce with them.
I can tell right now that I'm going to make everyone sick of these things. I have way too many ideas for them!

They're more like mini-impossible pies, but light and fluffy and a little eggy. They kind of remind me of the moist inside of cream puffs, but not exactly.

I love this idea. I like my impossible pie a certain way (lots of veggies and some cheese). Two of the boys can't have cheese. My DH would rather not ever (if possible) have a vegetable touch his eggs. We could all have what we want. Well, in this small respect, at least.

I made some different ones tonight. I made a dozen with ham and cheese (those were mostly for Dan), half a dozen with broccoli and cheese (those were mostly for me), and half a dozen with cherry pie filling. I sprinkled a little vanilla sugar on top of those as soon as they came out of the oven.
They were all good, but the cherry ones were messy. The gooey stuff leaked out the bottom when I lifted them out of the pan. I think they'd be neater with plain fruit and maybe a few cubes of cream cheese. I would probably dredge the cream cheese in sugar.
