You're probably wondering why anybody would make honey jelly when honey is perfectly delicious and will keep forever. Honey jelly doesn't drip! It's neater for sandwiches, biscuits and toast.
Honey Jelly
4 cups honey 1 cup water 1 (3 oz) packet of Certo liquid pectin
In large pan, mix honey and water. Bring to a boil over medium heat, stirring frequently, until mixture comes to a full boil. Stir in Certo and bring back to a boil. Pour into hot, sterilized jars and adjust lids and rings.
Makes 6 (8 oz) jars.

But all that boiling kills the honey! This would be good with store honey, though, that's already been pasteurized.

I used store honey. That's all I've been able to find for a few years. All of the beekeepers around here have passed away (not from keeping bees - they were just old)

Good news! Ben found a farm that produces its own honey and it's local! I got a case and their number and address is on the label if I want more.

If you want to make some that's not drippy, you can do the creamed version. Get you a little tub of creamed, then add it to a bigger amount of regular. It will start crystallizing that, too. Here's a link: thebeejournal.blogspot.com/2012/01/how-to-make-creamed-honey.html A lot of beekeepers make it because people like it for toast (no drips) and it's a way for them to use up the stash that has started to crystallize. Hey, Gayle, how much did it run up there? We got a gallon for $36 the other day in Homerville. The guy we were getting it from, in Macclenny, went up over $40.

That creamed honey looks delicious! My mom used to buy it, but it never occurred to me that I could make it at home. I usually mix it honey with butter to spread on toast. It doesn't drip as much as plain honey.
It was $15 a quart, but the lady let us have it for $12 because we bought a whole case and she could go home. It was cold and drizzly that day and she didn't want to be there anymore. Can't blame her.

we love creamed honey I make it the same way a bit of creamed honey .. those 950 hives out there make honey like bees .
