Pineapple Fruit Dressing contributed by carla
1/2 c. whipping cream 1/2 c. sugar 1/4 t. salt 2 T. cornstarch 1 egg, well beaten 1 c. pineapple juice 1 T. fresh lemon juice 2 T. butter
Whip cream to soft peaks and set aside. Sift sugar, salt and cornstarch into saucepan. Add beaten egg, pineapple juice, and lemon juice and stir well. Cook over low to medium heat until thick, stirring constantly. If sauce begins to separate, whisk vigorously. Remove from heat and add butter. Let cool to room temperature and fold in whipped cream. Chill. (May be prepared 1 day in advance.) Serve with an assortment of fruits including peaches, strawberries, mixed berries, grapes and melon.
