Fruited Carrot Salad contributed by gayla
6 carrots, peeled and grated 1 sm. can Mandarin oranges, drained (reserve juice) 1/2 can pineapple rings, drained, cubed (reserve juice) 1 sm. gala apple, cubed 1/3 c. raisins 1/2 c. hot water 1 tbsp. lemon juice vanilla flavored yogurt (you could substitute any flavor)
Place raisins and hot water in a small bowl, cover for 10-15 min., drain. Place cubed apple pieces in another small bowl and toss with lemon juice, drain and add reserved lemon juice to orange juice and pineapple juice reserves. In a large bowl combine grated carrots, Mandarin oranges, pineapple cubes, apple cubes, and raisins. Stir in desired amount of yogurt - amount depends on how moist you like your salad. Chill two hours before serving.
What did I do with that reserved juice? I made fruit syrup, of course.
Fruit Syrup
reserved juice 1 c. sugar 1/3 c. Karo syrup
In med. sauce pan combine all ingredients. Cook over medium high heat, stirring until sugar is dissolved. Bring to boil. Boil for 3 minutes, stirring constantly. Reduce heat and simmer, stirring occasionally, for 5 minutes. Pour into sterilized jar(s), seal and cool. Refrigerate after opening. Great on pancakes, waffles, cornbread, biscuits, etc
