I was watching one of those cooking shows where they go to various restaurants and have the chefs show how they make some of their dishes (possibly Diners, Drive-Ins, and Dives) when I noticed something that one of the pizza makers did. He brushed the edge of the crust with garlic butter before he put on his sauce or toppings. I've only seen the crust brushed with garlic butter after the pizza was baked, so I had to try it. I did it on the pizzas I made last night and we liked it a lot better! The crust was soft and chewy and even stayed that way when it was cold.
Now I have another idea. Next time, after I brush on the garlic butter, I'm going to sprinkle the edge of the dough with parmesan cheese and a little oregano and see if the crust doesn't taste like cheesy garlic bread.

I brush the crust with oil before and after. It seems to keep the sauce from making it soggy.
