In keeping with Gayle's earlier post, what's the one herb or spice you can't imagine having to do without? You can do one sweet and one savory if you like.

Gosh, I don't know that I could limit it to one - so I'm not going to - salt - pepper - cayenne - garlic - thyme - basil - oregano

If you don't count salt and pepper, my sweet favorite would be allspice and my savory, oregano.

I think the 'exciting' spices have very limited use. That's why I chose something more mundane, but with a lot of uses. I thought about garlic, because I use that and onion in nearly every meal, but didn't say it because I usually use fresh or pre-minced (from a jar).

I tend to use allspice more in savory cooking than in sweet, for some reason. It does really good things with beef.

I've used it in certain exotic dishes, but never thought to use it with beef. I'll have to try that!

I read that it's one of the main things that gives barbecue sauce it's flavor. And I use a Paula Deen beef stew recipe that calls for it. Ever since then, anytime I do beef with gravy, I put allspice in it.

Mmmmm! I can't have just one...but I'll try to keep it to a short list (I have an extensive spice drawer...).
I NEED:
basil savory cumin dill
vanilla nutmeg

It is kind of a little bit similar to thyme I guess, but more freshy and earthy at the same time...I use it a lot fresh in salades, savory drink blends (smoothies) and other raw foods, and dried in soups, veggie dishes.
