Gelled Fruit Salad (not jello) contributed by chilipalmer
1 can sliced pineapple, drained and juice reserved 1 can fruit cocktail, drained and juice reserved 1 apple, cored and diced 1 banana, sliced
Sice pineapple into chunks. Mix fruit in a glass bowl and set aside. Measure your reserved pineapple juice, add fruit cocktail juice until you get 2/3 to 1 cup. Place this in a saucepot and add 1-2 tablespoons cornstarch and 1/4 to 1/3 c. sugar. Whisk and bring to a boil. Whisk continuously until it changes from cloudy to clear and begins to set. Pour this hot gel over fruit salad; do not stir. Dust with cinnamon and chill until time to serve.
