I was working on cotton candy syrup again this morning. I am thinking that the acid I put in it to keep it from crystallizing might be the problem with the flavor, so I left out the cream of tartar.
I started with 2 cups of sugar and 1/4 cup of water in a saucepan. I started cooking it over medium-high heat so the sugar would melt. Once it started to boil, I put the lid on it to dissolve any sugar crystals that had gathered on the sides of the pan. I left it on about a minute, then took it off and stirred the syrup. So far, so good.
I planned on letting it just barely start to get some color on it, then add the rest of the water. It was cooking away nicely when, all of a sudden, it started to turn back into plain sugar! Within seconds it had gone from a thick bubbly syrup to a panful of white granulated sugar! I have NEVER seen sugar do that before!
I didn't know what to do, so I kept cooking it, hoping it would turn back into syrup. After a while, it started to take on a little color (fairly light tan), so I went ahead and added the rest of the water. It turned into something hard that reminded me of bones. I still didn't know what to do, so I kept cooking it. Once it was boiling good, I put the lid on it again and let it cook for about a minute. By then, most of the 'bones' had dissolved, but I kept cooking it until nearly all of the hard stuff was gone.
I poured it through a strainer into the jar. Then I tasted it. It tasted like cotton candy!!!
Now the question is, can I duplicate it? I'll keep you posted.
