-------------------------------------------------------------------------------- 1 eggplant sliced very thin and placed in cold water to prevent browning 3 medium zucchini sliced thin 2 yellow squash or 2 peter pan squash sliced 2 green, bell pepper sliced thin 2 medium tomatoes sliced 1 small red onion chopped 1 can of black olives drained and rinsed well 2 cups of vegan mozzarella cheese grated 3 cups of your favorite pasta sauce
`13x9 inch pan Bake at 350 degrees for 40 minutes
pour 1 cup of sauce on bottom of pan and place on top veggies in order given pour over top rest of sauce top with cheese cover with foil and bake.After baking let set for 10 minutes to set.
