A nice thick sauce for pancakes, waffles or as a dessert topping.
Thick and Buttery Vanilla Sauce
1/2 cup (1 stick) butter 3/4 cup sugar 1/2 cup buttermilk 1 T. light corn syrup 1 t. vanilla 1 t. baking soda
Melt butter in medium saucepan over medium heat. Add sugar, buttermilk, corn syrup, and vanilla and bring to a boil, stirring frequently. Once mixture boils, remove from heat and stir in baking soda until thoroughly mixed.
Serve warm.
Makes 1 pint.
Note: If you like, you can add 1/4 -1/2 t. of spice or other flavoring to mixture when you add the sugar.

I wanted to make some of this yesterday to use on bread pudding. I didn't have any buttermilk, so I substituted regular milk. It worked fine! I can't tell any difference.
