I was given two very ripe pears in a Christmas gift. I peeled and hand chopped. Added them to a box pound cake mix. Unbelievably delicious! Make 3 small loaves. Ate one loaf and gave the other two away to older neighbors.

Here's what I did with this idea. I took two cans of sliced pears and drained them. Then I folded them into a dry gluten free yellow cake mix. I roughly chopped the pears with the rubber spatula in this process. Then I folded in just enough of the drained syrup to make a batter. I poured this into two greased loaf pans. IN another bowl, I mixed 1/2 stick of butter with some GF flour, sugar, and a LOT of cinnamon. I didn't measure because I using of small amounts left in the canisters, but I would say maybe 1/3 c flour and 1/4 c sugar. I topped the loaves with this and baked at 350 about about 30-40 minutes. I just started checking at 20 minutes because the loaves were small and used a toothpick to test for doneness.
