I found out that cottage cheese can be frozen. I froze the cottage cheese in one cup portions. I successfully used the thawed cottage cheese as the milk replacement in package mixes for pound cakes. According to what I read cottage cheese can be used as milk replacement in baked items. I have only used pound cake mixes. Successful 3 times.

Good idea! You can also put it in a blender and blend it until smooth, then use as a substitute for sour cream or in Ranch dressing.

I had about a cup of cottage cheese that nobody was eating, so I tried a new recipe for pancakes. They turned out great! I posted the recipe in the Breakfast forum.

Using it in pound cakes sounds delicious. I just read somewhere that you can add ranch dressing mix to it (or why not just the seasonings, I guess) and it makes a great dip.
