Hi Everyone! I am new here and want to say hello to all of you. I am not a professional baker, just try the baking recipes from YouTube or other forums. Since, last two years, I am trying to make light weight, spongy and bakery like cakes and pastries but I always don't get the desired result. I have made cakes with eggs, with eggs, with condensed milk (without eggs) but all of them were the heavy weight ones. When I talk with one of my friend about bad pastry, she suggested me to use this kind of pastry mats here but it didn't affect on the end result. Again, I tried to add some Semolina with all purpose flour but it was also didn't give me the right result. I usually go with oil and don't use butter but it doesn't mean, I didn't use butter ever. I have tried butter. All in all, I am looking the right recipe of weightless cake like bakery. Can anyone of you suggest me the right one? I am waiting for your recipes and suggestions.

Welcome to the forum! You might like the recipe for a Genoise. It has butter in it. I haven't tried it with oil, but it might work. The butter is mainly for the flavor. grandmaw.proboards.com/thread/397/genoise

6 eggs? Really? I never used 6 eggs in a single cake while baking. How much time is required to beat these eggs? Should I beat with a beater?

I use an electric mixer. It really doesn't take very long to make. I don't have the patience for fussy desserts. This one comes out looking fancy with minimal effort.
