I made these morning. OMG! They're so good! I had to stop myself from eating them all! These will be a regular.
Egg Bites
8 eggs 1/2 cup cottage cheese 1 cup cheddar cheese, shredded 6 strips bacon, precooked (or 1 packet of real bacon bits) 1 tsp salt 2 tsp Tabasco sauce (or your favorite hot sauce)
In a blender, combine all of the ingredients.
Blend it on high for about 20 to 30 seconds or until all the ingredients have liquified.
Spray nonstick cooking spray in a 12 count muffin tin.
Divide the blender ingredients equally muffin tin.
Bake at 350 degrees for 10 to 12 minutes or until all of the egg bites are fully cooked.
Use a knife to slide around the edges of each egg bite to loosen it from the sides of the muffin tin. This allows the egg bites to easily remove from the pan. You will want to do this when it’s still warm to prevent the egg bites from sticking to the pan when it cools down.

I made 2 batches of these yesterday. I made the first batch in mini-muffin tins. It made 4 dozen. (They're almost half gone already)
Then I had an idea. I was given 2 cans of the big layered biscuits, so I made a second batch of the eggs, but baked them in a flattish full-sized muffin tin (I think it's actually a little tart pan) I put the eggs inside the baked biscuits (from one can) to make sandwiches. I had 4 leftover, but one of the kids devoured them last night. Not much goes to waste around here.

I'm still making these regularly. I ate a whole dozen this morning! I don't think I'll ever get tired of them.

I don't know. You might be able to substitute sour cream or yogurt. Maybe even cream cheese and a little milk. I really don't like cottage cheese, but you can't taste it in these and you blend out all the lumps.

I made a double batch of these again today. I made a dozen in a tart pan (like a muffin tin, but the bottom is about the same size as the top) and 5 dozen mini-muffins. I have some hamburger buns to put the big ones on and will probably just eat the little ones (like I've been doing all morning) I saw an article yesterday about Starbucks and Dunkin Donuts having a competition between them. As I was reading what their new breakfast items were, I realized they were egg bites!
