Below is the original recipe. The problem is, it doesn't say how big to make the balls or offer different cooking times for various microwaves. The measurements also depend on the size of the egg white. I only added about 1 1/2 cups of powdered sugar. That was all I could work into my small egg white.
I made the first plate-full according to the recipe, but they burnt a little on one edge. I was able to salvage those by pulling the burnt spot off. I cooked the remaining plates-full a little less time and they turned out perfectly. Still, I think the recipe is a keeper, you just need to work in only as much powdered sugar as the egg white will take to make a 'dough' and keep an eye on them. I made the whole recipe, from start to finish, in 10 minutes and ended up with 9 merengues.
Microwave Meringues
1 egg white 2 1/2 cups powdered sugar
Lightly beat egg whites. Stir in powdered sugar to form a thick dough. Roll into balls and place 3 balls at a time on a plate. Microwave 1 1/2 minutes. Set aside to cool and use in desserts.
