I made this from food storage and "leftovers." It was a BIG hit. - 3 cups dehydrated potato dices
- 6 cups water
- 2 tablespoons chicken soup base (bouillon is what I'd normally use, but I had soup base on hand)
- 1-2 cups chopped ham ends (we buy hams and slice for sandwiches; I save the odd shaped ends to mix into other dishes)
- a fair shake of onion powder 😊
- 1-2 cups of shredded cheese
- 1 cup heavy cream (I keep shelf stable boxes of cream in the pantry, and rotate them).
Put the first five items in the slow cooker on high for three hours. Add in the cheese about a half hour before serving. Stir in the cream just before serving and heat through.
I made a bit more than we needed, but the leftovers were just as good.

How did I never think of adding cheese to potato soup??? I have some minced ham ends in the freezer. I have to try this!

I bet it would be good with sour cream, too. I just don't keep that in the house normally.
